• 6 tbsp Ghee
• 2 cups plain Yogurt
• 5 tbsp roasted Cumin Seeds
• 2 tbsp Whole Black Peppercorns
• 1 tsp Turmeric Powder
• 2 tbsp Garam Masala Powder
• 2 tbsp Dried Chili Flakes
• 6 cloves of Garlic
• 4 inch Fresh Ginger
• 3 Cardamom
• 2 Green Chilies
• 1 bunch fresh Coriander
• 2tbsp Lemon Juice
• 1 tbsp Salt
Recipe:
• Remove excess fat from lamb, and cut several deep slashes in it
• Blend ghee with all spices, lemon juice and salt in food processor, and pour into deep slashes in lamb
• Now add salt in yogurt and also spread it over lamb leg
• Put the lamb leg in the foil-lined roasting pan and cover with two foil layers, and chill overnight
• Preheat oven to 525F (275C)
• Roast lamb for 40 minutes in oven and then reduce heat to 250F (120C), and roast for about 3 hours
• Depending on size of lamb leg, apply butter on it every 30 minutes
• When lamb leg is cooked, take it out into a platter
• Take out the dripping sauce into saucepan, and cook till reduce by half
• Pour the sauce over lamb leg roast before serving the guests
Spicy lamb leg roast is ready to enjoy on Eid-ul-Adha.
